A lot of routes to East Africa connect through Dubai, and a layover of 12+ hours is genuinely worth leaving the airport for.
If you have 12-18 hours
Head straight to Old Dubai — the Gold and Spice Souks, an abra ride across the creek, and lunch in Deira. It's a completely different feel from the skyline postcard shots and takes half a day comfortably.
If you have a full day
Add the Burj Khalifa's observation deck (book ahead — it sells out) and the Dubai Mall aquarium in the afternoon, finishing with a sunset at Kite Beach.
Practical notes
Confirm your visa situation before booking a long layover — many nationalities get a free transit visa automatically, but it's worth confirming with your airline rather than assuming.
